- 2 ripe avocados
- 1/4 cup lemon juice
- olive oil
- garlic (1 clove if using fresh, about a teaspoon if using the paste)
- salt and pepper
Put your salted pasta water on to boil. In the blender put in the avocado, lemon juice, a decent drizzle (I don’t measure but maybe 2 tablespoons or so. If it’s not mixing well enough add a little more olive oil. Throw in your pulverized garlic and a decent dumping of salt and pepper. Just taste it for fucks sake.
When the pasta is done just dump it on top and stir. You don’t even need to heat it. Top with parmesan if you’re into that.
